How to cut laminate countertop?

We want to cut the sides of our kitchen countertop so we can get rid of the gaps and add a bigger oven to fill the space. We are fairly certain it's laminate material. Does anyone know if this will be possible without damaging or removing the rest of the countertop? What type of workman should we reach out to to do it?
